It’s already March but it is still very cold and freezing out there .So I wanted to make some soup and made this. This soup can be made easily in no time and is very healthy too. I have made this quite a few times and is a hit .
Carrot Ginger Soup Recipe
Preparation Time : 5 minutes | Cooking Time : 15 mins | Serves : 2
Carrots – 3 (washed, peeled and chopped)
Ginger – 2 inch piece
Garlic – 3 or 4 pods
Butter – 1 tablespoon
Bay leaf – 1
salt – to taste
pepper – to taste
cumin powder – 1/4 teaspoon
water – 2 cups
1. In a pressure cooker, add a teaspoon of butter. When it is hot ,add ginger and garlic and fry for a minute.
2.Then add the chopped carrots and salt and fry for 2 minutes.
3.Add 2 cups of water , cover and cook for two whistles.
4. After two whistles , switch off the stove and let it cool. Once it is cool, discard the ginger pieces , and add the carrot and garlic to a blender and grind it to paste. Reserve the stock.
5. In a sauce pan , melt the remaining butter and add the bay leaves to it and then add the ground paste, stock, pepper and cumin powder. Check for salt and add if needed.
6. If the soup is very thick, water can be added to achieve desired consistency. When the soup becomes hot , switch off the stove, transfer the soup to bowl and squeeze a lemon on to it and serve hot.
